How about another refreshing salad for the summer, that will surely help us stay trim and looking good in those shorts. That’s right, you heard it, an apple and orange salad with raisins and pecans! Don’t knock it till you try it, it’s delicious, the sweetness from the raisins and the crunchiness from the pecans is what I think makes it special.

My husband’s friend gave my husband a list of salad recipes and I decided to go through them all and try them all out. This was the first one on the list and it turned out excellent. Although we had it for dinner, I don’t know if I would recommend this for a main course, but definitely a great lunch salad.

The apple and orange salad was extremely easy to make. In a large bowl whisk the red wine vinegar, orange juice and olive oil together. Add the raisins and let them soak in the dressing until we’re done cleaning the orange and apples.

Next you need to peel an orange and cut it in small pieces. The recipe only called for one orange, but I think 2 oranges would have been better, more of a citrus flavor.

You’ll need about 4 apples, it works best if you have different apples, green ones and red ones, it just makes for prettier colors. Core them and cut those in small pieces as well, equal to the orange pieces. I love to use my OXO Good Grips Apple Corer and Divider (See all Salad Tongs) for this, it just makes things so much easier.

Add the oranges and apples to the bowl with raisins and add about 2/3 of a cup of roughly chopped pecans to the salad.

Add some salt and pepper to taste, toss everything together and voila! You’ve got yourself an awesome super healthy salad. You can’t go wrong with this! Enjoy it and don’t feel guilty eating it, nothing to feel guilty about.

  • 2

    tablespoon

    olive oil

  • 2

    tablespoon

    red wine vinegar

  • 2 1/2

    tablespoon

    orange juice

    (freshly squeezed)

  • 1/2

    cup

    raisins

  • 1

    orange

  • 4

    apples

  • 2/3

    cup

    pecans

    (or walnuts, roughly chopped)

  • 1/4

    teaspoon

    salt

    (or to taste)

  • 1/4

    teaspoon

    pepper

    (or to taste)

Instructions 

  • In a large bowl, whisk the olive oil, red wine vinegar, and orange juice. Add the raisins and set it aside.

  • Peel the orange and cut it into small pieces.

  • Core the apples and cut them in small pieces.

  • Add the oranges, apples, pecans to the bowl with raisins. Add salt and pepper to taste.

  • Toss everything together very well and serve.
